Baking | Pizza Hut 麵包 (中種法)

上網搵左個食譜話好似Pizza hut既蒜蓉包,整完出黎都幾似麵包,不過就無吐司咁軟熟,但係呢我整完之後加左蒜蓉再焗,好香脆同有蛋味,但係我就麻麻地有蛋味,可能用日本蛋蛋味勁,下次我會減糖同減蛋,除左加蒜蓉,依個包用黎點咖哩好好食,因為好索汁 B)

中種麵團

水 70ml, 乾酵母 2g, 高筋麵粉 90g, 糖 10g

主麵團

中種麵團, 高筋麵粉 130g, 蛋 半隻, 鹽 2g, 糖 20g, 無鹽牛油 25g

做法:

1. 用暖水加入乾酵母 (用手試水溫,熱得黎辣手就可以), 我係室溫大概25度發左兩個鐘,發到係個邊度有拉絲咁既樣就ok喇

     

2. 發完之後加埋麵粉、糖、鹽、蛋落去搓,依幾樣野搓好之後先加牛油,我將佢切細先加落去,我覺得比較易搓,之後我直接係張檯度搓,如果太痴就係手印少少粉,今次搓左十五分鐘,搓到右邊咁

     

3. 之後又拎去發,發左一個鐘左右,發到差唔多一倍大

     

4. 發完之後輕輕按壓,將佢排氣,分完一舊舊之後就擺落模再發,左圖係發之前,右係發左半個鐘左右

     

發多15分鐘之後

5. 我個模係 7.5×4寸,用180度焗半個鐘
